Hi Eric.  There is an option in Mac the Ripper to rip just the audio.   
However you can only do it one title at a time.  When you select the  
title you want, the window then has a demux button.  Pressing that  
will give you a list of all the video and audio streams in that  
particular title.  If you just select the audio stream, that's all you  
get.
The audio is in ac3 format, so you'll need another program to do  
something meaningful with that.  I've used quicktime pro with perian  
installed, but I'm sure there are other solutions.
