Searching in mail isn't my favorite thing either.

Turn quick-Nav off.  Hit command-option-f to get to the search field.  Once you 
enter your keyword, arrow down, this is where you can narrow down your 
selections such as sender, subject, etc.  I think once you come across the one 
you want, you enter on it.
