When you set up an Apple ID and password -- for example, when you  
first create an account so you can make purchases at the iTunes Store  
-- you can use an email address for the username.  If you also  
subscribe to Apple's MobileMe service, which provides mail and network  
services for a yearly fee ($99 list price in the U.S.), your MobileMe  
email address is generally also used for your Apple ID.  However, in  
general setting up an Apple ID, which you can use to check on your  
registered products, make purchases from the iTunes Store, make online  
purchases from  Apple, etc. doesn't establish your Apple ID as a  
usable email address.

You can just continue to use any of your existing email address with  
the mail application on your Mac.  Since you had to create a Google  
account to sign up for this list, you can also create a gmail (Google  
mail) account to use for email.

Apple also offers a 60-day free trial of MobileMe services.  Since  
you're just getting started transitioning to the Mac, you might want  
to wait before trying this out, since there are still some  
accessibility improvements that can be made to the web interface  
(although this is not necessary for many uses of MobileMe)
