There are instructions for optimal use of GMail with Apple Mail if you want to use imap. The advantage of iMap is that your tags in GMail will become folders in Apple Mail and the structure will be identical between the two systems so if you have a item tagged as Family in GMAIL it will show up in the GMAIL's subfolder called Family. It is quite cool .
There was also an extensive discussion on the tidbits.com comments lists about peoples experience with this and the advantages or disadavantages of imap.
