When recording podcasts, most of us do infact use skype. It's actually really easy to set up a conference. When you're talking to someone, switch back to the main skype window. Find the third person of your conference in your contacts list, do a VO shift M on their name to bring up a context menu, and select add to conference. Repeat this to add additional people. I don't know if there's a limit to how many people you can have, or if it's a matter of bandwidth. The largest conference I've been in had 6 participants.
