You can just replace "book" in Document->Settings->Class Options with "article" or "preprint" etc. (and you could save templates for that) However, if these options provide different layouts, e.g. if "book" has chapters while "article" hasn't, it would be more convenient to define separate layout files (the one for article would then include "article.layout" instead of "book.layout", for instance).
