There is package, yfonts, to typeset in Gothic German with long s. If you don't want to use a German Gothic font, it is more complex. You must find a font that contains the long s glyph and then have some macro code to replace s in the middle of words by long s and keep them short at the start and end of words. I have not checked but I guess that a comprehensive font like lmodern has the long s glyph. There is also a dayroman font on CTAN with long s but it is not a font included in LaTeX distribution and you will have to install it on your LaTeX system. It is not very easy to install new fonts on LaTeX. Dayroman does not have an italic. If you just want one or two long s in your text, you could use the tipa package to get the phonetical alphabet.
