Let me guess: you're using TeXShop, with its Preferences > Document >
Encoding set to "MacOSRoman". Try changing that encoding to "Iso
Latin 1" (and I've found you have to quit TeXShop and restart for it
to take effect). Now view the exported LaTeX files. Does that do the
trick?
