Help->Customisation has a section "Decalring a new text class" which is a good place to start. Basically you start by importing the main class you want to use, and add any new paragraph environments you want, or alter existing ones. So you could either start with the Book class and add aCopyright environment, or start with Book (Koma-script) and edit it to make it behave more like Book.
