This is a feature of babel. Apparently, the Spanish typographic rules
say that bullets should be like that.
If you disagree (are you really a typography expert?),
create a file spanish.cfg in a place that latex can find,
containing:

\es@itemize
        {\textbullet}
        {\normalfont\bfseries\textendash}
        {\textasteriskcentered}
        {\textperiodcentered}
