You don't need to use the \rm command in this case: You can press M-c r for roman text (while in mathed) and M-c space to return to italics. An even better thing to do, is to put \DeclareMathOperator{\sign}{sign} in the preamble (and enable ams-math in the document dialog), and then use \sign in mathed.
