The problem is that changing fonts for a whole document is not as easy
as one may think (and you are never sure that all document classes
will appreciate this treatment!). I agree that easy selection of fonts
should be done, and it is indeed on our todo list, but alas at a
rather low priority.

The rule of thumb I use is that roman fonts give better legibility on
paper, but sans serif fonts are better on screen (browser, slides). So
arguably, LyX could display sans-serif but print roman, but that would
be very confusing :)
