Go to Document > Settings and click on non-TeX fonts, then select some fonts. - We are aware that LyX currently encourages the wrong way, to use TeX fonts. There are some efforts to improve this situation. Also, if you are ever interested in testing the manuals more comprehensively, we have a test suite set up to export all of our manuals and examples in several different formats to see if the exports work.
