Yes, if you use XeTeX and if the used languages are covered by polyglossia, it
uses polyglossia.
Aha.
"Automatic" selects what we think is the most suitable language package for
the given backend and language selection.
The rationale behind this is simply that some people might for some reason
still want to use babel even with XeTeX and if polyglossia would be available.
For those people, we offer "Always Babel" to force babel. Most people just
will want to stick to "Automatic" (or "Default" in document settings, for that
matter).

9. In the menu Document->Settings->Language the language package setting
"custom" is unclear to me. There is no other useful package besides babel,
so I enter there "\usepackage{polyglossia}", but babel is still used. I
cannot find a case where this setting is useful, so what is its real
purpose?
You can enter for instance
\usepackage{ngerman}
if you prefer ngerman.sty over babel's ngerman for some reason. There might
also be some extra packages for languages not covered by babel.

15. Section "Reverse DVI/PDF search" of the Additional Features manual
misses a description of the differences between \synctex=1 and
\synctex=-1. Can this please added?
I've no time to add it, but here's the description:
\synctex=1 is the default method to activate synchronization. However, this
creates a compressed auxiliary file, which cannot be parsed by certain
applications (viewer, editors). \synctex=-1 creates an uncompressed aux file.
People should try it in case the default method fails for them.
I'll add this now.
