I wouldn't sell yourselves short -- LyX is a great editor. In particular, being able to change around the UI and set keyboard shortcuts to customized command sequences would be very useful for plain text-editing. But beyond that, being able to edit all my documents in-house, in LyX, rather than having a separate text-editing program open, would make things more efficient.
