Note that for greek characters, you can also type them directly, in
two ways:

\gamma <space> gives you a gamma

M-m g g        gives you the same.

I agree however that keeping the menus open would be useful.

This is a matter of setting up your window manager. If you use
focus-follows-mouse (as I do too) you have to take care of the place
where your mouse lies. You might want to consider -click-to-focus
policies to avoid that.

Now that I think of it, there is probably a way for the math-panel to
say that it does not want to get keyboard focus...

Have a look at the file Math_macros.lyx in the example
directories. Macros are already supported in LyX.
