Hello Nio, thanks for getting back to me.

ok, I just tried on a VM and one of the differences I noticed is that
language input is broken. Upon inspection I found ibus was installed and
possibly causing issues/conflicts with fcitx, not sure. I removed it but
the situation hasn't changed, I cannot basically switch to any other input
method (I have. Also I use sogou pinyin for chinese input and that works
just fine when adding it on a Lubuntu install, but it won't work for some
reason when adding it on a lubuntu install that came from a mini +
lubuntu-desktop. any thoughts on that? there may be more
differences/problems that I've yet to find.

Yes it is possible to do it as you describe in BIOS mode :-)

sudo apt-get install lubuntu-desktop

In UEFI mode (as well as in BIOS mode) you can do the corresponding
thing starting from the Ubuntu Server iso file.
