I don't know how it would work with music but lyx is a wysiawg (what
you see is almost what you get) front end above latex. It makes work
quite a bit easier in most cases.

Otherwise you could try emacs (you'll need bidi emacs for hebrew), or
gvim (has better hebrew support at the moment).
The is also a kde front end called kile which is quite nice (don't know
about the hebrew support in it)
