Personally I use wordpad and make sure that I save in plain text. When I first save the file I go back and rename it for a .ly extension and from then on just work in it.
Then I can drag and drop the file on the lilypond icon or right-click on the file and 'open with...' Lilypond. That is about as simple as it gets I for me. I can even change the font in the wordpad file (to courier) as having a fixed width font to edit with is easier on the eye (I think).
