Thanks for your suggestions! They led to the simplest solution: don't use voiceOne/voiceTwo or stemUp/stemDown in the first place, but use \\ only:

{ << { e''2. } \\ { a'2~a'8[ b'] } >> << { e''2.\fermata } \\ { b'2.\fermata } >> }

I said I suspected to be doing things in a complicated way, didn't I?

(It is strange, though, that in my original version (see below) the stemUp did not force the stem upwards.)
