For me, it's lilypond-book with LaTeX.

LaTeX is made for publishing. For a serious publication, it's SO much
better than a word processer.
While I’m using ConTeXt* (the other TeX) with LilyPond and published a
few songbooks this way, I’d also suggest LaTeX for its better
integration with LilyPond.
