Presumably whoever built /home/hermann/lilypond/usr/bin/* wanted them to link to the particular set of libraries which they provided under /home/hermann/lilypond/usr/lib which also came in the installation file. If you export LD_LIBRARY_PATH="/home/hermann/lilypond/usr/bin" instead, then you just prevent those libraries from being found because they're not under /home/hermann/lilypond/usr/bin. Not setting it will have the same effect (except in the pathological case where someone has LD_LIBRARY_PATH set globally, a Bad Thing).
