Just add the following magic lines

\paper{
  \translator{
    \ScoreContext
    LyricText \override #'font-name = #"ecrm1000"
  }
}

(ecrm1000 is exactly the font file used by LaTeX in the
text part of your file, which you can see from the output
of 'dvips -Ppdf test.dvi'.)

Attached is a .lytex file where the Polish characters outside of the lilypond appear correctly, but using Polish in the lilypond isn't working. Do you have any ideas about what to try next?
