My preference would be to put this at the end of font-table.ly:
displayFontSet =
#(define-music-function (parser location set) (scm?)
#{
\markuplines \override-lines #'(word-space . 4)
\doc-chars $set
#})
Then you'd have
@lilypond
\include "font-table.ly"
#clefs
@end lilypond
Note: I haven't tried this yet.
