You can already record a Macro and then via Tools -> Customize assign it to a
keyboard shortcut of your choice. But that seems overkill for a single
character.

Equally can use the AutoCorrect feature, where we already provide:

:---: for the U+2014 EM DASH, 
:--: for the U+2013 EN DASH,
:-: for the U+2212 MINUS SIGN  

The font used for any autocorrect substitution will follow the current
paragraph style (unless os/DE font fallback is required).

Notice that any entry string (including those already defined) can be assigned
any resulting "correction", so if you don't like the emoji style short codes
syntax you can roll your own.
