I've been using UTF-8 for some years. In my experience, there are only two issues: (i.) I can't get all the accented letters onto my console keymap, only those which are in the latin1 subset (so in X I can use the built-in dead keys for e.g. ȩ (e.g. Polish), ő (Hungarian) and č (many slavic languages written in latin) but I can't do that on the console). My best attempt at a keymap is now at http://www.linuxfromscratch.org/~ken/desktop-2009-06/LFS-6.4-mid-2009/uk-utf.txt but you'll probably manage ok with the standard one. Hmm, since you aren't yet using UTF-8, those examples were an e with an ogonek ('tail'), o with double acute, and c with caron. (ii.) Some people persist in using non-UTF-8 mail clients, particularly on lkml, which screw things up. Similarly, anyone with a large amount of legacy text or mail will have to attempt to convert each item. I discount consolefonts (many have very poor coverage of anything more than the latin1 glyphs) because my own sigma-consolefonts solves the problems for me.
