Jeff, If he plugged it into a Panasonic digital jack, that should be no problem. The panasonic digital phones use the second/outer pair of a jack, while the Polycom (and other analog phones) use the center pair conductors. Therefore the polycom wires did not touch the panasonic digital wires. Even if it did, I would think it should not have caused any electrical problem (it still wouldn't work though). So if the Polycom went wonky, it may have been from something else.
I'm disappointed in the Polycom speaker volume, even though the mics seem ok. The biggest problem seems to come from expectations. People often expect a small polycom unit to give a fantastick conference call by magic (advertising hype doesn't help). But as you suggested, the acoustics of the room are EXTREMELY important. Multiple mics will help as soon as you have more than 3 or 4 people around the table. There is a new model Polycom series now that I haven't tried yet. If you do a lot of important conferences, you can consider a more professional system (i.e. permanently installed). The number of options as well as the price can go way up.
