I'd put all of the foam on the stub wing (that wasn't a choice, was it?) and 
glass it into the stub wing skin.  If you put all the foam on root of the 
wing side, when you lean them up against the wall your foam and glass will 
get smooshed (tech term there).  And I'd make them meet together perfectly 
so that all that was needed to fill the gap would be 3/4" white electrical 
tape.  That's an "upgrade" I'd like to do to mine next time the wings come 
off (that's been a few years already).  I had the same question when I did 
mine, but didn't have the good sense to ask that question when I was 
building mine...
