I'm not sure what you will gain by heating the whole assembly unless there is significant difference in the Thermal Coefficient of Expansion in the materials (i.e., the bearing material does not expand as quickly as the wheel.). If you have access to an arbor press, you may want to try that after you have tossed the assembly in your freezer for a day or so, then soaked the wheel portion (only) in water, or gently applied a torch to the wheel (and I do mean cautiously and slowly while applying some pressure). I don't think a drift and small sledge would work as well as consistent pressure applied with a press. You may even be able to get them out without the miscellaneous thermal excursions we all try from time to time.
In any event, I would suggest that you support all surfaces opposite the direction of force to minimize distortion.
