Eric, The FAA leaves it up to you to make sure the parts and structures are built to the kit mfg. standards. You are not requested to show any construction logs with pictures or any engineering documantations. The FAA inspector or DAR will visually inspect the AC. He will ask you to remove the cowl and inpect FWFD and then ask you to start the engine and inspect that everything shows correct on it's gauges. while the engine is running. You will have to have all your documents and application ready (you have plenty of time to prepare those) From what I read about the project you have more than 51% of the different tasks (I did not say 51% of the amount of work left) in the project left to be done so you can be candid about buying it at the current stage.
