Welcome. For the KR we usually are not using the peel ply for the same reason as most people use it for. We use it for a good finish that doesn't require a lot of sanding. The more normal use for peel ply is like Ed says with leaving a surface with some "bite" to is for subsequent bonding. Since the wings have two layers of glass that are cured at the same time and most of the rest of the glass is just one layer we don't do a whole lot of bonding to already cured pieces.
One of the advantages of peel ply instead of plastic wrap or something similar is that air bubbles and excess resin tend to suck up through the peel ply. If you use plastic wrap you can wind up with build ups of epoxy that need to be sanded off, particularly under wrinkles in the wrap. You can also have bubbles under it that leave resin starved areas where the bubbles were. I have used Saran wrap and bagging film with success on smaller areas and even some larger areas. It is particularly good for repair work where you can stretch it over the repair and come out with something that matches the original surface with almost no filling and sanding required. I have even done this with just plastic packing tape right over the wet resin. I have done most of my new layups over foam without peel ply or anything with good results also.
