Thanks for all the suggestion son the bench. As I suspected from my days in my Daddy's cabinet shop, particle board is the way to go for a straight surface. As for water...well, that's why we were always real careful to seal our countertops where it counts, and varnish the part that covers the dishwasher (steam).
