Scott,

If you're not planning to lose any weight and plan on building
a KR2S, it's going to be a single place airplane, regardless of
the mods you make.  

My advise (I'm assuming you're looking for some honest input)
is to rent a Cessna to fly your "lady friends" and build the 2S
as a single place from the git-go.  Look on the krnet.org site
or Mark Langfords site for the KR100.  Either go with KR100
plans if available or narrow down the KR2S to a single place.
You could leave all other measurements the same such as
the wing and tail section.  Build it as light as possible, keep
the fuselage shape wide until after the trailedge of the wing
for less drag, put on some good farings, and I'd bet you could
end up with a 180+mph rocket.   The builder of the KR100
claimed 200+ at the Reno air races.  

My opinion is that if you weigh 260 pounds, there is no way
to build a KR that will allow you to add a passanger of 
any size and keep the CG in the envelope.  

My KR2 has a 24" stretch with an 0-200 and came in at
765 empty.  I weigh 200 pounds and have carried passangers
up to approx 170 pounds.  At those weights it performs
similar to a C-150 in hot weather.  It still handles good in
the air but it is not the "rocket" I enjoy when flying solo.
The weight doesn't hurt to much on the speed but the takeoff
and climb is rather poor, 500fpm on a 90 degree day. My solo 
takeoff weight is generally in the 1050 to 1100 pound range.
I'm using the stock KR2 wing with shorter tips so my wing
is 8 inches shorter then stock.  Every mod makes a difference.

If after reading this a KR is still in your future, I'd say go for
it.  Given your experience I'd say you'd have no problems
in the building part and the KR is one awesome little bird
to fly.  Just use one hand to hold on to reality while using
the other to grab for the brass ring. :-)
