One thing I can tell you is that my seat back is right in the middle of the 
"4-6" range in the plans (I think that's right), and it could be leaned back 
a little more for my taste.  I wouldn't mind if my stick was aft about 3"

Rudder pedals are easy to deal with for different pilots.  You can use the 
Bengelis trick of inserting a metal strip with several holes in it (maybe 
1", 2", and 3" on center) into each rudder cable, near the seats so you can 
move a pin around and change the length of the rudder cable, thereby 
bringing the pedals closer to you if needed.  You'd need a spring return on 
the pedals themselves (or something other than a closed loop) if you use 
this system though.  Rudder pedals are shown at 
http://home.hiwaay.net/~langford/pedals/index.html, but mine aren't 
adjustable.
