Thanks everybody for the input. I'm still not sure how I'm going to solve the problem, but I've made some progress.
I made a device to try out and weigh, but now my problem is...I don't know how much a standard set of rudder pedals weighs, so I don't know if I'm doing good or bad. Does anyone know how much their pedals and hinges setup weighs? Chris, I'm still interested in seeing your Katana's design, if you don't mind.
