Mark, The quickest and easiest way I can think of is to make some "platform" blocks to either permanently or temporarily attach to the forward side of the passenger pedals. These could move the pedals aft 2-3 inches, while maintaining the rudder pedal attach point. Obviously, this does not address braking, which would have to be addressed differently (two completely independant pedals and brake system), but if you're looking for her to take the controls in flight, this might work.
