Gavin, I basically built my center wing stub with the dihedral starting at the center line inside the fuselage. Both for front and rear spars. Did this by calculating correct dihedral to get to wing tips, assuming the outer wings would just be an extension of the dihedral. Construction of center wing stubs was accomplished on the bench, by using 1/4" laminations, glued together and clamped while glue cured. Built them up the same dimensions called for in the plans, both top and bottom of the spars. Then once the spacers in between had been installed, drilled holes for allowing air pressure to be equalized along the center wing stub, before applying a finish coat to protect the interior. Then covered the front and back of the spars with the required plywood. Should be strong, still light in weight and the outer wings can be mounted on the WAFs without worrying about that break in the center stub versus the outer wings. Of course you still have to deal with the horizontal angle change called for on the rear wing stubs versus the outer wing panels. Hope this helps you think through how you might proceed.
