I thought about using the search engine to select transaction with specific criterias, but again I can't select "transactions from categories with no [property] == [value]". I figured tonight that it may be easier to use suffixes for categories names that I need to exclude, then using search engine to select "transactions from categories with names not ending with [suffix]".
