That's because it's an app. We don't currently force app icons to be symbolic
(where possible) when they're in the sidebar.
We could, but the issue here is that most apps don't have symbolic icons. This
would work for the Help Center app because it does happen to have a symbolic
icon (at least with Breeze theme), but most other apps wouldn't respond to the
request for a symbolic icon.
I forgot all about this issue because I removed the Help Center app from the
sidebar ages ago. Will think about it.
