This is a bug in RustDesk, it doesn't request the stream to be remembered (it
does not pass a persist_mode to the portal request; see
https://github.com/rustdesk/rustdesk/blob/master/libs/scrap/src/wayland/pipewire.rs#L666).
It works as expected with e.g. OBS Studio
