Is your ant script or your Eclipse settings deciding which compiler version you are using ? Does your GPX plugin have dependencies ? Did you try to remove (or no rename) you java 1.7 installation while compiling, just to make sure you're not using it ?
Why don't you stick to java 1.5 as we do for OpenJUMP and most plugins ?
