I'm unsure whether you can use the code or not, but you can have a look: https://svn.wald.intevation.org/svn/deegree/base/trunk/src/org/deegree/io/gpx But no write support, sorry ;-) What is maybe different in the deegree reader is that it outputs the elevation values for tracks (it uses EPSG:4979 as coordinate system). Of course, the elevation values are lost anyway when read in OpenJUMP...
