An update: it wasn't Jenkins, but a Chef script for Jenkins<https://github.com/fnichol/chef-jenkins/blob/317ab1983718559395ac639248b34ab1e4ae5778/recipes/default.rb#L61-L79>that was causing our issue. *git* was one of the plugins we had configured to automatically upgrade (the fix was to simply stop using this automatic upgrade feature).
