You won't loose your config or build history on re-install if you do it as 
described.
Save the configuration files from Jenkins, in doubt make a copy of the 
Jenkins root folder to a safe location. clear the root folder and the 
plugin folder *but don't touch the jobs folder*. The jobs folder contain 
the configuration of your jobs and your build history.
You can optionally either rename your current Jenkins installation folder 
or make an entire copy so you can make a rollback if something goes 
completely wild.

One file is located in the rootfolder as far as I recall but you have saved 
it ;)
Re-install Jenkins and copy all the xml files back to to Jenkins root 
folder and make a first test.
Then add the plugins step by step if everything is running.
