Indeed, I tend to remove all CCs from my replies whenever I remember. I suspect the reason you'll see a lot of CCs is that most mail clients only have "reply" (which would often miss the list completely) and "reply to all" (which accumulates CCs), and no "reply to list" (which would pick up the list address from an appropriate header and ignore everything else).
