Try also enabling signature in Preferences - Mail - Composition.
Looks like signature can be enabled/disabled globally and also
locally for every identity.
That was it! Many thanks for your help!
For posterity sake, these two settings have to be checked in
order for the collapsible signature box to appear attached to the
composition window:
Settings (the cog) > Preferences > Mail > Personal Information
and make sure the "Show the signature on the compose screen?" box
at the bottom is checked AND
Settings (the cog) > Preferences > Mail > Composition
and make sure the "Show the signature on the compose screen?"
box is checked also
