You can do a 'git diff imp-6.0.2..imp-x.x.x imp' command to
see the specific code that changed between any two versions.

javascript code. Can you help here? Our old imp version was
2.21.10.2 on Horde 3.3.11
I can't even begin to tell you how many things have changed
between Horde 3 -> Horde 5.

As somebody who has done heavy customisation/hacking on DIMP H3 for a
German authority, I can assure you the difference between the
standalone DIMP app and the DIMP view in H4 and the Horde 5 Ajax
Framework as used in IMP H5 and Kronolith is tremendous, it's not
something one would express as a series of patches.
I understand the interest in keyboard shortcuts, but this is not
something you will achieve by reverting this or that git commit.
There are even some parts of the current AJAX framework I have not
fully understood yet, but this is a totally different topic.
Please add a feature request, but as Michael said, without funding, it
won't happen soon.
