Normally, if you use SPF records to check incoming mail, then that
stops this kind of indirect mail. A mail server _can_ set a "From:"
header to anything but its "From " header should be a domain it is
authorised to serve. (The analogue is the "sender address" versus the
"post-office stamp" --- faking the latter is a criminal offence!).
