Thanks, everyone, for the interesting comments and stories. I have used Hercules in the past (3 or 4 years ago, briefly) and am familiar with it. I was already planning to involve it in setting up the real hardware.
The 4341 which we used at UChicago to move from SVS on an Amdahl 470/v7 to MVS on a 3031 used CKD disks, as it happens. MVS ran as a preferred guest under VM/370 on the 4341. I did receive one off-line response to my actual question which will save our education budget a few thousand dollars, to the effect that the modern descendants of the operating systems I used to know are managed very differently and knowledge of them would not help me in the least.
