SUSE has shipped KVM for System z beginning with SUSE Linux Enterprise Server 11 SP3 (as a technical preview). So you don't need to wait at all. The installation scripts didn't really require much in the way of changes since KVM has been supported on other architectures for some time now. KVM for System z is nowhere near being technically capable of "replacing" z/VM. It doesn't even have all the capabilities of KVM for ia32/x86_64 yet. As time goes on, I expect some amount of improvement compared to ia32/x86_64, but certainly not "next week." For customers that require some sort of security certification for their hypervisor, z/VM is pretty hard to beat, as is its ability to greatly over commit resources. For shops that have never run z/VM before, KVM could very well be "good enough" to get started with virtualizing guests on System z. But I expect that if they continue to grow their workload they'll eventually want to step up to using z/VM.
